The comment stated;
As the mother of a child in Ramsey with Coeliac disease, we seek gluten free food to maintain well being on medical grounds. There is limited access to fresh baked goods for anyone following a gluten free diet on the island all year round. I can often spend a lot of time going backwards and forwards to Douglas often unsuccessfully to source a range of bread, rolls, and cakes for my daughter. This situation is compounded further in the winter particularly when boats are cancelled and often "luxury goods" are not prioritised for getting taken to the island first.
A lot of the supermarket brands of gluten free bakery goods are "long life" goods and lack the palatability of freshly baked gluten free products when done successfully.
A local bakery would open up opportunities of eating "on the go" for many, it would provide a much needed service in Ramsey and indeed the island and I support wholeheartedly the application to convert these empty premises to a gluten free bakery.

I feel this would bring so much added value to the lives of those who have to eat gluten free foods on the island. It would increase footfall in the area as those on medically restricted diets are prepared to travel to get the best on offer and this must only be a positive for the town, and for shopping local.
