#### Proposal

**DEPT OF ENVIRONMENT** **ADD AND AGRICULTURE** Our proposal is to convert the current retail unit, Desmond's Fish Shop to allow for the provision of hot/cold food and drink also.

The main function of the premises will be a sandwich bar and deli, selling fish produce, but in addition we will be selling hot/cold dishes and drinks to take away.

Our main focus is on making homemade, fresh local food to take away, whilst also continuing the sale of fish. We propose to open Monday to Friday 8.30am to 4.30pm & 9am to 3.30pm on a Saturday. We will be employing 2 full time members of staff and 1 part time.

We do not intend any structural changes to the building, but are intending to re-plaster the existing walls, resurface all floors, remove existing free-standing equipment and replace this with brand new equipment and serving counters. This will include extraction and ventilation.

The property does not currently have central heating so we will install two electric wall heaters in the serving area.

#### Access/Parking

The current owner parks his car comfortably in the side lane running adjacent to the property for the duration of the shop opening time. This also provides an area for deliveries to be made. There is sufficient parking in the locality along Parliament Street and the Quayside.

#### Litter

We intend to provide every customer with take-out packaging that has been recycled and that is biodegradable, but will also provide additional bins if necessary. We will be encouraging our customers to recycle waste if possible.
